Last Nights Dinner!

Last night my parents’ friend came over for dinner and I made creamy cauliflower soup and I really wanted bacon so I just decided to add some delicious bacon to my soup and it tasted so good and I was very pleased with the outcome.  
Creamy Cauliflower Soup with Bacon
Ingredients
50 gr. Unsalted butter
1 onion, chopped
1 rib celery, chopped
3 cloves garlic
Salt to taste
5 medium sized potatoes, peeled and quartered
2 heads cauliflower, cut it in small pieces
1 quart beef broth
1 quart water
1 cup heavy cream
75 gr. bacon, chopped
40 gr finely grated Parmigiano-Reggiano cheese
Directions
Melt and heat up the butter over medium heat. Toss in the onion and celery and cook it for a little while around 5 minutes.  Then add the garlic and a bit of salt and stir that together.
Stir in potatoes, cauliflower, beef broth, and water. Bring to a boil, reduce heat to medium-low and simmer until cauliflower is tender and potatoes are easily smashed against the side of the pot. That will take about 30 minutes
Puree the soup using an immersion blender until smooth. Reduce the heat to low, Pour in the cream and cheese and continue to cook until melted.
Cook bacon in a skillet over medium heat until crisp and add it to the soup
Season with more salt to taste
Then just Bon Appétit!

First book of the year!

I started reading this book around Christmastime but got caught up at work and all the stress got the better of me. So I didn't have to time to really sit down and read but now I'm going to start over on the book and finish it.

The book is called if I stay, last year a movie came out based on this book. The story follows 17-year-old Mia Hall as she deals with the aftermath of a catastrophic car accident involving her family. In a coma, Mia has an out-of-body experience and watches as friends and family gather at the hospital where she is being treated. Mia watches as her memories flash before her eyes as she comes to realize that she must decide if she should wake up and lead a life far more difficult than she ever anticipated, or slip away and die


I didn’t want to see the movie before reading the book because I didn’t want to spoil the book. I often find book more interesting the movies just like the fault in our stars I loved the book but wasn’t really pleased with the movie I would give the book 9 out of 10 but the movie 6 out of ten.

A new year a new beginning!

It’s the first day of the year and no better time for writing down our New Year’s resolutions and of course for me to open up my blog again.
New Year’s resolutions are a bit like babies: They’re fun to make but extremely difficult to maintain. My New Year’s resolutions will be from crocheting a blanket up to travel out of the country. New Year’s resolutions and usually about breaking some kind of a bad habit such as give up smoking or cut back on alcohol. The myth says that it takes 21 days to make or break a habit. A research studying habits of 96 people over a 12-week period. Each person chose one new habit for the 12 weeks and reported each day on whether or not they did the behavior and how automatic the behavior felt. On average, it takes more than 2 months before a new behavior becomes automatic, 66 days to be exact. And how long it takes a new habit to form can vary widely depending on the behavior, the person, and the circumstances. So when you but down your New Year’s resolutions make them realistic to avoid unnecessary disappointment.

  • Move out from my parents
  • Get my fat % below 17%
  • Take a French class
  • Workout at least 150-time trough out the year.
  • Crochet a blanket
  • Travel to Ísafjörður

  • Reduce sugar in my diet
  • Take a history class
  • Get 20.000 views on my Youtube account
